Hand-picked by divers, the premium Tokoroten from the Amakusa region on the Izu Peninsula is considered a luxury item, priced at approximately twice the cost of regular Tokoroten. At Izu Kappa, we specifically blend several varieties of Tokoroten, with a focus on the highest quality ones hand-picked by skilled female divers. The amount of Tokoroten used is about double the normal quantity. The discernible firmness, texture, and mouthfeel become evident when consumed.

Izu is one of the leading producers in Japan. The Izu Peninsula's Tokoroten is renowned as a premium variety, priced at approximately twice the cost of regular Tokoroten. In recent years, Tokoroten has been imported from countries such as South Korea, China, Chile, Morocco, and Portugal. The quality of domestically produced Tokoroten is superior, with imported varieties primarily used for agar production.

We carefully simmer Tokoroten in an open pot. We do not use a pressure cooker, which can cook quickly in a short amount of time. The advantage of using an open pot is that we can observe the cooking process of Tokoroten, allowing us to create high-quality Tokoroten. It is a very time-consuming process but essential. On the other hand, for mass production of Tokoroten, a pressure cooker is used to cook a large amount of ingredients quickly. Kappa no Anmitsu is a traditional Japanese sweet made with Tokoroten, which is rich in minerals and dietary fiber from Amakusa seaweed.
